As this weekend is full of family time we have a few events that we need to bring treats to. I thought this would be a fun alternative for me and the kiddos to make (or maybe just me if they are too lucky with their fingers and the frosting!)
What you need:
- Cake mix (we got the First Street big bag of some)
- Frosting – aim for a white or light color. I bought pre made but homemade is fine
- Mini cupcake liners
- Mini muffin tin
- Shredded coconut
Directions:
Step 1: Pick up a bag of First Street cake mix from your local Smart & Final. I was not sure if I wanted a large bag of cake mix around, but I love that I can make enough batter for a dozen and be done with it. No halfing a small box and hoping to use it later.
Step 2: Prepare your cake batter as directed.
Step 3: Line your mini muffin tin with liners. If you spray the liners before adding the butter they come off easier.
Step 4: Fill each muffin tin 3/4 ( or a little more) full and then bake as directed. While everything is baking fill one small bowl with coconut and provide an additional plate for later.
Step 5: Remove the cupcakes from oven and allow to cool.
Step 6: Take the linings off of the cupcakes.
Step 7: Once they are cooled all the way, cover them in frosting (yes, this gets a little messy!).
Step 8: Then drop the ball into the bowl of coconut and roll it around.
Step 9: BAM! Bunny Tails are in the house!
The Grand Opening
This past week I had the opportunity to check out our new Phoenix Smart & Final store at their Grand Opening on April 1st. Have you ever been? Let me tell you a little more about what you can expect.

…talk about club house size, right?
Their Bulk Foods section had to be my favorite. I love being able to chose from a variety of healthy options!
And I was really impressed to see that on most isles I could find sections labeled “Good & Well” where they pulled together the organic, gluten free and other healthy options in one easy to find place. This below is the Baking section on the Left and the Freezer Foods section on the right.
When I think of warehouse size items that I like to buy, bulk spices are definitely what I think of. Check out these sizes. I even found some Ginger in a large 9 oz bottle! Ginger is a family favorite to have around when we are sick and I have never found it larger than 2 oz, so this was exciting for me.
They even have the large club size candy packs, too. And note in every picture how well stocked all the isles were…that was awesome to see!
And don’t forget the party trays and paper goods. All come at club sizes and a great price.
They even had an area for Fresh Flowers that were a great price.
My girls were so excited that I grabbed some to bring home.
