Ready or not it is back to school time! My facebook feed is blowing up with first day of school pictures. It is crazy how early they start in Arizona. We aren’t going to be starting for a couple weeks but that means time to organize and get ready.
Mornings are the worst part of back to school. Getting kids up early, dressed, hair done, chores and breakfast by 9 in the morning is loads of work. I should probably start practicing next week but mornings are definitely my downfall. Ten more minutes in bed always sounds so nice! Getting out of bed early when I don’t have to is just CRAZY!
One of the things I do to help stream line my mornings is have a plan for breakfast before the kids get up. Here are some of my go to meals that I can make ahead of time or that can be thrown together in a moments notice. Add some cold cereal and scrambled eggs and we have a whole week of easy breakfast meals.
First off is my fabulous pancake recipe. I make a big batch on the weekend and we have them to warm up and eat all week long. If your feeling very adventurous you can make a huge batch and freeze them to have for the month. When freezing put wax paper between the pancakes so you can grab out only what you want each morning. Next up is one of my all time favorite breakfast make ahead breakfasts. Freezer breakfast sandwiches are something all my kids love and they are perfect for eating in the car on mornings you don’t have time to eat at home. Fridays my family is doing a co-op school an hour from my house and we have to leave by 7:30 in the morning. This recipe is super versatile. My homemade granola is great on its own or perfect to throw on top of yogurt and fruit. My kids love it because they can personalize their own to the kind of yogurt the like and the kind of fruit they like. Anything that makes my kids eat more fruit is always a win in my book!
