Freezer cooking is one of my new favorite things! I started doing it a few years ago and haven’t looked back since. I have branched out from just dinners and have even started making breakfast freezer meals! I don’t know about you but I am not much of a morning person so having breakfast ready and in the freezer is fabulous. Today I am going to show you how to make freezer breakfast sandwiches. They are super easy to make!
Ingredients
- Eggs
- English muffins
- Ham or Cooked sausage patties (I do half and half). You could do bacon too!
- Cheddar cheese slices
- Salt and Pepper to taste
- Non-stick cooking spray
First off I always make mine on a large griddle because I like to make a bunch at a time but you can make them in a skillet if you prefer. Tip: Place wide mouth jar lids on the griddle and spray well with Pam. This makes the perfect circle egg for an English muffin.
Once griddle is hot, crack eggs into lids and break yokes. Salt and pepper to taste.
When eggs are cooked half way remove rings and flip eggs over. Continue cooking until done.
Place eggs on foiled cookie sheet when they are done to let them cool before assembling.
While they are cooling open English Muffins with a fork. This is a great project for the kids to get involved with.
If you are using sausage or bacon it needs to be cooked up ahead of time. This can even be done up to a day ahead of time. I normally do half of my sandwiches with ham and half with sausage patties. I like the variety.
Next set up your assembly line for wrapping them up. I lay out as many foil squares as I can get on my table with the English muffins open on them. This is when its time to get the kids involved!
Place eggs on one side of English muffin.
Top egg with cheese slices. Tip: Turn corners in on cheese to keep cheese in the sandwich when you reheat.
Place chosen meat on cheese and top with other English muffin half.
Wrap each individually with foil.
I label mine with a sharpie S sausage and H for ham.
Place wrapped sandwiches in labeled freezer bag. To reheat unwrap from foil and wrap in paper towel. Heat for 45 seconds at 50% power and heat for 45 seconds on full power. I like to flip mine when I add more time but that is not always necessary.
Unwrap and ENJOY!!!
