As most of you know I have seven kids. I am sure you won’t be to surprised to hear that there are very few things in life that all of my kids can agree on at the same time. Meals are the worst because everyone has such different tastes. There is one meal that is a no brainer though if I want everyone to agree and enjoy. HOMEMADE PANCAKES! They are my go to breakfast or dinner on a busy day that everyone loves. Everyone but me:( Pancakes are personally not my favorite and actually I didn’t even like pancakes until I made these and now I like them but not near as often as my kids want to eat them. They are kind of heavy to eat all the time for me but I hate making more than one thing. I definitely don’t have time for that!!
I found something amazing when I was at Walmart the other week, NEW Quaker® Real Medleys® Yogurt Cups. They are a shelf stable yogurt, fruit, nuts and wholegrain granola breakfast. A much lighter breakfast for me to enjoy when my kids are enjoying their pancakes.
I have never seen anything like this but it is so easy, filling, and delicious. You just add cold milk stir and enjoy! “CRUNCHY. COOL. YUM.” (Tip: They would be fabulous to take camping!!! Now that you have the perfect mom breakfast lets make some pancakes for the kids!!
Homemade Pancakes (I usually double the recipe and freeze the extras for breakfasts for the next couple of weeks.)
Ingredients
- 2 cups Flour
- 3 t. Baking Powder
- 1 t. salt
- 2 Eggs
- 1 cups Milk
- 4 T. Oil
- 2 T. Syrup
Add flour, baking powder and salt to a large bowl.
Whisk dry ingredients together.
Add oil and syrup. Tip: Use your measuring spoon for the oil first and the syrup slides right out.
Add wet mixture to the dry mixture and whisk together.
Batter will be slightly lumpy.
Cook on a hot buttered griddle. Tip: Use a measuring cup to put the batter on the griddle to make less mess!
