I love baking and giving baked goods as gifts this time of year but sometimes I think I have to many goodies to eat. I think jar cookie recipes are the perfect solution. Who ever you give the jar to can make them whenever they want so after the holidays you still have some goodies to enjoy. They are super fun to put together and there are a million recipes out there. I found this peppermint chocolate cookie over on Crazy Little Projects that I had to try.
Here are the ingredients. Most you will have in your house. The peppermint Andes are seasonal and you can only get them around Christmas but if you can’t find them the green and brown Andes mints would work just fine. They are just a little more festive with the red candies:)
In the Jar:
1/2 c. sugar
1/2 c. brown sugar
1/4 c. cocoa powder
1/2 t. salt
1/2 t. baking soda
1 1/4 c. flour
2/3 c. chocolate chips
2/3 c. peppermint chips
To make into cookies add:
1/2 c. butter, softened
1 egg
1 t. vanilla
Bake at 375 degrees for 8-10 min
After you have gathered your ingredients line up your jars. I made 11 of them at the same time so I set up an assembly line.
Now you just layer the ingredients in order that they are listed above. I used my canning funnel to get the ingredients in the jars with out any mess. If you have one I would definitely use it.
It is handy to have a butter knife near by to spread out the ingredients so you get pretty layers as you are making them. It was especially useful with the brown sugar and the cocoa powder.
When you get to the end the jar gets pretty full so in order to have room for the peppermint candy we used a knife to push the chocolate chips down into the flour.
I was lucky enough to have lots of helpers that made making these go super fast and the girls loved helping.
Don’t they look nice all lined up . They are so pretty!
All that is left is to put on the lid. If you want to make it a little more festive you can trace the lid with some Christmas paper and put it on top.
I tied the recipe with a cute piece of ribbon and it is ready for gift giving!
