Sundays have started to become a fun day for treats. The past few months I have been bribing my kiddos with treats after church if they get to church on time. Luckily for me it has worked out quite well. They get dressed quickly in the morning with no fight and even get there early…I’m still working on me and the baby! So this past Sunday we got creative and made some Rocky Road Brownies. They turned out awesome, so we had to share!
What You Need:
- Box of favorite Brownie Mix
- Eggs
- Water
- Butter or coconut oil (we substituted out the vegetable oil)
- 1 cup marshmallows, plus a little extra
- 1/3-1/2 cup peanut butter
Directions:
Step 1: Mix your favorite brownie mix together. We substitute any oil for coconut oil or butter (when it’s cold we will do half and half so the coconut oil will stay liquid). But we think coconut oil makes amazing brownies! Seriously, they do not even stick to the pan and the edges are always soft.
Step 2: Add 1 cup marshmallows.
Step 3: Mix them in. An easy step for little helpers!
Step 4: Pour into a pre-greased baking dish. Add 1/3-1/2 cup warm peanut butter. We started with just a little less than 1/2 cup and ended up not using it all. We warmed it up so it would spread better. I want to try chunky peanut butter to get more of the “Rocky” in Rocky Road, but the smooth was great for my kiddos that don’t like that kind of texture.
Step 5: Mix the peanut butter in lightly. Just enough so that the PB flavor is throughout, but not completely mixed in.
Step 6: Bake! We baked ours at 325 degrees for 25 minutes. They were still a little gooey looking when we pulled them out, but our fork was clean after a fork test.
Step 7: ENJOY!!! The kiddos and my husband said they were really good. In fact, after we shared some with friends the quickly disappeared.! I barely had a chance to snap this picture!
