My kiddos love anything pumpkin and I found this yummy pumpkin pancake recipe that I used to make Pumpkin Faced Pancakes a couple of weeks ago. They were so yummy, we made them for breakfast for the rest of the week! This is also an easy recipe to let Little Helpers join in on the batter making.
What You Need
Ingredients:
- 1 1/4 cups all-purpose flour
- 1/2 tsp salt
- 2 teaspoons baking powder
- 1 tsp pumpkin spice seasoning (or a mixture of cinnamon and nutmeg)
- 1/4 tsp cinnamon
- 2 T sugar
- 1 cup milk – a little extra milk may be needed to thin the batter if it sits too long
- 1/2 cup pumpkin puree
- 1 egg, beaten
- 1 tablespoon butter
Supplies:
- Pan
- Whisk or large spoon
- Spatula
- 2 bowls – at least 1 medium and 1 small mixing bowl (a plastic container in my case!) will work
- Fork or sifter
- Measuring cup and spoons
Directions
Step 1: Add all wet ingredients together plus sugar in one bowl and mix together.
Step 2: In a separate bowl add the dry ingredients and mix/sift together. I usually do this with a fork will fast.
Step 3: Add dry ingredients to the wet ingredients and mix until everything is blended together well.
Step 4: Pre heat pan on medium low. Use a 1/4 or 1/3 cup to scoop pancake mixture into the pan. This may vary depending on your burner power. Even medium left the outside of my pancakes over cooked and the insides not ready. Low and/or medium low seemed to be the right temperature for us…notice the too brown pancake in the top pic? 🙂
