Summer is in full force here in Arizona. That means 115 degree days and lots and lots of swimming. What else do you do when it is that hot outside??? After a long day of swimming and enjoying the sunshine the last thing you want to do is turn in your oven and cook dinner. UGH! I actually try not to use my oven all summer it just makes the house hotter and nobody wants that!
Recently I was at my local Walmart shopping early in the morning. In Arizona you either get up and go really early to the store before 8am or super late after 9pm to beat the heat. So I chose early because for once in my life I was moving early and I figured I would take advantage of having my husband home and I ran by myself to the store. You read right BY MYSELF! Woot, Woot!! Anyway I was perusing the deli department (yep you can peruse when you are by yourself) and these signs caught my eye. Anything with Coke on it always catches my eye because it is my favorite! I even collect memorabilia, I am hopeless. LOL
It was so early I thought for sure they wouldn’t have any rotisserie chickens but I was pleasantly surprised they had them in the cold wall under the take and bake pizzas. The best part was they were all marked down to $2.48 since they were from the day before. Holy Cow what a deal! They are always a decent price for an easy meal but I got two for the price of one that day and I was pretty dang excited. Who knew??
I took my super cheap cooked chicken home and turned it into a delicious SUPER EASY dinner perfect for a hot summer day!
BBQ Chicken Bacon Wraps
Ingredients
- 1 whole rotisserie chicken, approximately 4 cups chunked
- 1 c. shredded cheddar cheese
- 1/2 c. diced red bell pepper
- 1/2 c. chopped bacon (I cheated and used these precooked bacon pieces and they were great.)
- 1/2 c. chopped cilantro
- 1/2 c. sliced green onions
- 1/2 c. BBQ sauce
- 1/2 c. Ranch dressing
Add the first six ingredients into a mixing bowl.
Next measure and add BBQ sauce and Ranch.
Slowly mix with a spoon until everything is coated and mixed together.
Scoop desired amount into middle of tortilla. (I used 10 inch tortillas and I used about a cup of the chicken mixture.)
Lay a couple pieces of lettuce over the chicken mixture and roll up like a burrito.
You are all ready to enjoy! I served it with some chips, fresh veggies, and watermelon to make it a complete meal.
Don’t forget my favorite part an ice cold glass of Coca-Cola! Yummy, the perfect summer dinner.
Bonus: They work great to make them ahead of time and wrap individually in foil. That way you can throw them in the ice chest to take along for all your summer adventures!
