I love to cook. I think it is fun and relaxing and I am so excited I have passed this love on to my children. I have one tween daughter who loves to bake and another who loves to cook “real food” as she calls it. She is all about learning a variety of dinner recipes. Her favorite recipe to make is Shepherds Pie and she can do it start to finish all by herself!!
I say this is a major mom win!! We have it at least once a month and the beauty of this recipe is it can be frozen for another time. I always like to keep one in the freezer so I have a meal on hand for someone in need or for us on a day that is to busy to cook.
This recipe is a cinch because it has canned Del Monte vegetables that I always stock up on and keep on hand. The fall is the perfect time to watch for stock up sales and Albertsons/Safeway is having just such a sale 9/30-10/13!! I picked some up the other day at my local Albertsons! Freezer Meal: Shepherds Pie
Ingredients
- 1 pound browned hamburger
- 3-4 cups mashed potatoes (leftovers work great)
- 1 can Del Monte Green Beans
- 1 can Del Monte Golden Sweet Corn
- 1 can of Del Monte Diced Tomatoes Italian Blend (basil, garlic, & oregano)
- 1 can tomato soup
- 2 t. Worcestershire Sauce
- Salt and Pepper to taste
I love this meal because it can all be made in one dish so it doesn’t create a bunch of dishes.
Put 1 pound of ground beef in a large casserole dish.
Add Green Beans, Corn, Tomato soup, Diced Italian tomatoes, Worcestershire sauce, and salt and pepper.
Stir together until all mixed up.
Now you have two choices. You can bake in the oven 350 degrees for 25-30 minutes or cover with 3 layers of foil and freeze for a future meal. To cook after frozen defrost for 24 hours in the fridge and then bake at 350 degrees for 30-40 minutes. (If it is still a little frozen it will take a little longer to cook.)
