I love Mexican food. I could eat it every day of the week, heck I even served it at my wedding. For years I have been making all different kinds of Mexican food but could never master a good refried bean. Finally after many, many failed attempts I found this recipe on Pennies & Pancakes that was great.
I have tweaked over the last year and now think it is to good not to share!! It is super simple and sooooo inexpensive to make. Seriously a pot of beans cost less than $5 and even my supersized family can eat it for more than one meal!! It’s a no brainer.
Here it is in all its easy glory. I forgot to take a picture of the before but I am sure you can figure it out!
Ingredients
2 lbs pinto beans (4 cups if you buy them in bulk like me.)
1 large sweet onion chopped
1 1/2 T. salt
1 t. pepper
3 heaping t. cumin
5 T. minced garlic
10 c. hot water
First you want to go through your beans and make sure there are no rocks and then rinse them off. Then throw them in the crock pot.
Next add the rest of the ingredients to the crock pot.
Seriously it really is that easy. Cook on High for 3 hours and then on Low for 3 hours.
When they are done cooking you can leave them just like they are as whole beans (they make great burritos just like Chipotle) or you can blend them to make them smooth and silky like restaurant beans. ( The picture looks blurry but it is all the steam coming off the beans. Man they are HOT!)
To blend them I use my food processor and do a couple of scoops at a time. I use a slotted spoon to put them in the food processor and then add a little liquid at a time to get the consistency I want.
You can make them as thin or as thick as you want. I love how easy it is to make them just the way your family likes them!
It is impossible to get a good picture of a blob of beans but there you go easy peasy and so delicious! You have to try them and tell me what you think!
